Choose a cut

Hover over a cut, or tap it, to see what it became. Each answer comes from what was said on camera.

One cow. Every cut.

  • The dinner: Fore rib, Sirloin
  • Salami: Neck & clod, Shin, Topside
  • Bresaola: Top rump, Silverside
  • Sausages and burgers: Flank
  • Meat boxes: Chuck & blade, Thick rib, Brisket, Thin rib, Rump, Fillet
  • Not on the tapes: Leg, Oxtail

How we know

Every answer comes from what was said on camera. At the butcher’s, the topside went “for salami”, with the shin, neck and clod from the front; the silverside and top rump went for bresaola; and “both flanks” went into the burgers and sausages with a little of the trim. The fore rib was cut “tomahawk style” for Marcel, who cooked the tomahawks and sirloin at The Eagle Tavern. The rest went into meat boxes.

What the tapes don’t show, we leave out: weights, which cuts went into which box, and what became of the leg and the oxtail.

The chart is a butcher’s chart drawn on her shape, not a measured map of her carcass, and her ear tag is blurred. For where each cut sits on any cow and how it is usually cooked, see beef cuts explained, with the animation.

The film

210: From Dairy to Dinner

210 is a retired Holstein Friesian dairy cow: eleven years old, six calves, 38,663 litres of milk. Cows like her usually end up as mince, burgers and ready meals. Instead, her farmer, a team of butchers, a curer and a chef set out to give her a different ending, at a table. The film follows her from the dawn milking to the dinner plate and asks what an old dairy cow is worth.
