What happens to dairy cows when they stop milking?

Most British dairy cows leave the herd young, and most of their meat becomes mince. The numbers, and one cow who went another way.

Most leave the herd young

A dairy cow earns her place by the litre. When her yield or her health falls away, she is usually replaced by a younger cow. In Britain that happens early: the average cow in the milking herd is 4.6 years old.2 Cows leaving the herd have, on average, had 3.6 lactations, and around 28% of a typical herd is replaced each year.3

Where they go

Cull cows go for beef. UK cow slaughter totalled 623,000 head in 2024,1 and over the five years 2021 to 2025, dairy cows made up 56% of cows slaughtered in Great Britain.4 Most of that meat becomes what the trade calls manufacturing beef: mince, burgers and ready meals.5 Beef from older dairy cows is widely thought to be good for little else.6

A ban on older beef

For almost a decade older beef was not eaten in Britain at all. From 1996 to 2005, after BSE, meat from cattle over 30 months old was banned from the food chain.7 A generation of cooks grew up without it.

One cow who went another way

210 was a 100% Holstein Friesian. She gave six calves and 38,663 litres of milk over 1,835 days in milk, then spent her retirement on grass. At eleven she was more than twice the age of the average cow in the herd. Instead of the mince line, she went to a butcher, a curer and a chef, and to a table of the people who knew her. The film follows all of it.

The film

210: From Dairy to Dinner

210 is a retired Holstein Friesian dairy cow: eleven years old, six calves, 38,663 litres of milk. Cows like her usually end up as mince, burgers and ready meals. Instead, her farmer, a team of butchers, a curer and a chef set out to give her a different ending, at a table. The film follows her from the dawn milking to the dinner plate and asks what an old dairy cow is worth.
